cantalope wine

The local farmer believes he will have a bumper crop this year and is talking me into making cantalope wine. I have an old wine, beer, cider, hydromel (mead?) making book but no cantalope wine but just about everything else.

The plan would be to make 20 to 40 liters. Problem is, I'm not sure how to make it. A tested recipe would be nice, anyone have one?

Looking over the recipies for most of the wines and the call is for lots of sugar. Any idea what the starting specific gravity would be for a hobby wine like mellon for example? Same as grape wine?

SOme mixes call for boiling the juice, same for mellons ?

Suggestions appreciated.. JJ

JJ,

I've been tempted to make cantaloupe wine myself, but have been reluctant to try it because I've heard it is quite challenging. Check out the following recipes from Jack Keller:

You'll notice that he says" "if you do one thing wrong, the wine quickly heads south". I normally do several things wrong when I make wine, so I have hesitated. However, you may do very well with it yourself. If you decide to make it, please share your experiences with us all.

It sounds like it may not be easy!

Good luck.

JJ,

try here. If Jack doesn't have it, it doesn't exist. Also a great general reference for procedure, etc.

Thank you for the link to Keller. I am thinking of quantities greater than what he is making. No so much out of ambition but because all my gear is based on

23 litres. Perhaps I'll try smaller. I'll post results as I go along.
