Which of these "is" or is close to Sparkaloid: Chitosan Fining gelatine Polyclar Isinglass
I'm supposed to use it for my Sake but I'm not sure which to use, I have all of these at home so it just a question of which would be more suitable.

Weez, None of the above are or are close to Sparkalloid. Sparkalloid is a polysaccharide and when used for fining, it reacts differently than any of the above materials. "Klearmor" is also a polysaccharide, and it and Sparkalloid are similar fining materials. Lum Del Mar, California, USA
None of those is the same as Sparkaloid (sp?), but of those Polyclar is the _least_ similar in effect.
Do a trial with each of the others on small aliquots of the main batch and see which one tastes the best after settling.
