You can also take the door off an old refrigerator and expand the capacity using the foam enclosure idea. If the freezer section is open to this area you can get it pretty cold, but sealing it up is harder than it looks.
I just use an old 60's era fridge that I pulled the freezer door off of. It gets to 25 F with no modification. I can get two carboys in at one time, that's it's only drawback. I't got to be a power hog so it sits idle most of the time.

Frank, Bring it down, I can fire up the fridge. You can get a 5 and 6 galon in mine, it runs at around 27 F. Joe
