concetrate with brix at 22.5-24.5%

i do not have a brix scale,so would this juice need to have water added and if so how much wine can i make from a 55 gallon barrle of this.i just dont want to over do the space that i have in the basement.

If the brix is 22.5 - 24.5, no water is needed to adjust sugar. That's right in the range you want.

That's not that high for a red, it's maybe 10% high for a white. This is concentrate or juice from concentrate?

Sounds like good juice, use it exactly as is and make 55 gallons. But put it in about 80 to 100 gallons of primary fomenters. You do not want to have it boil out all over the place. ;o)

but I would not. I would recommend you get several 8 to 15 gallon food grade plastic buckets. With 8 gallon buckets you can start 5 or maybe 6 gallons. With a 15 you can start

10 or 11 gallons. These are about the maximum size you can reasonably bully around when working with them. Any bigger and they really have to be set up and are unmovable. If you use the big ones you should consider pumps and so forth. More expense and trouble than I want to go to. I have somewhere around 15 primary buckets ranging from 6 to 15 gallons. That gives me a good range so I have the size I want and capacity to do any size lot I might tackle.

The 32 and 40 gallon rubbermaid trash cans can be outfitted with a wheeled cart (made specifically for them) on the bottom.
