Double Bubble

Hi,

just started off a kit of black cherry and it has gone a bit mad! Overnight the fermentation has been vigorous to say the least and I have now got a reddy purple pattern all over my kitchen work surface.

My question is, is this a problem or should I just leave it to settle down?

Not a problem, and it should settle down. You might want to put something under your fermentation bucket next time so nothing gets stained. Darlene

At least yours was on the kitchen work surface..... I have a lovely carrot wine all over the edge of my partners new woollen rug....doh. At the moment I have managed to hide it by putting the jar onto a large plasic tray (o the wonders of hind sight...). I feel that when she finds it my short wine making days may be over... Anyone have any ideas how to get wine out of a new woollen rug....PLEASE....

If it is a wool rug, then I would check with a dry cleaner. You don't want to shrink the rug. You might check to see if it is even washable...? Good-luck. Darlene

If I have one that is making a mess, then I put paper towel underneath the bucket. Wait a second...are you fermenting in a glass carboy with a bung and airlock? or are you fermenting in a plastic bucket with a cover? Darlene

I am fermenting in a glass demijohn with bung and airlock. The goo was coming right through the airlock.

That happened to me with the watermelon wine I started a couple months ago. First time I've had anything ferment that violently at first

Okay, that's what I kind of thought. I basically do 1 gallon batches, so I did start out doing a primary fermentation in a glass carboy with a bung and airlock. And yes, that would happen - the stuff would go right out of the bung and go all over. Recently, I bought this 2 gallon glass container, which I cover with plastic & rubberband during the primary ferment, and I don't have a problem with big messes anymore. This container is big enough to include fruit when I'm fermenting on fruit. Darlene

First of all when you first caped it with the airlock, at what level was the contents. One should normally not fill above the rim of the demijohn. However seeing as you have a gusher you may consider splitting your batch, and then when all as settled down retuning to the original container.

The problem that faces anybody is how much liquid to put in at the start, I usually don't exceed 3/4 of the demijohn (1 gallon glass jar ),this allows for adding other items, water, sugar etc. And the problem you have encountered.

Carboy

A carboy is a glass vessel used in fermenting wine, mead and sometimes beer. Usually it is fitted with a rubber stopper and an airlock to prevent bacteria from entering during the fermentation process.

Carboys come in various volumes ranging from 1 gallon to 6.5 gallons. A 15 gallon carboy is often called a demijohn.

It actually holds 8.7 pints if you go right to the top.
