First of all its not really necessary to do primary fermentation in a demijohn (= carboy) with a stopper, since you will have plenty of CO2, alcohol and possibly SO2 if you use it, to keep your wine safe from infection. You can use a larger, open container that is covered loosely with a lid or a piece of plastic.

If you do want to use your current setup you could use a blowoff tube as used in homebrewing. Buy a piece of food-grade plastic tubing that fits tightly inside your demijohn neck and then run this into another bucket (filled with water or sanitizer if you wish). Once the gushing stops you can attach the airlock.

To the wool rug poster: you might try an oxygen-based cleaner like oxyclean. (Check the instructions first, but I think its safe on wool)
