Dry Sherry

First post in a couple of years. Used to make a passable dry sherry using palomino juiceor white wine conc. Added banana, dried figs, small amt prunes/raisins and flor yeast. Gypsum? to reduce Ph.Syrup feeding produced some high (16-17%) alcohol content in the presence of some air. HELP! have lost the recipe!!!! Anybody got a good recipe to share? E. W.
