Enoferm Alpha vs. Viniflora Oenococcus Oeni

Question for the group...

Which ML bacteria is better? I'm looking at the Viniflora strain of Oenococcus Oeni or Enoferm Alpha, which is a different strain of the Oenococcus Oeni. I'm leaning towards Enoferm Alpha due to it seeming to be heartier and more tolerant of lower temps and PH levels.

Does anyone have experience with both that they can share?

Also, I see a 2.5g package is good for 66 gallons... I only need enough for 12 gallons. How do I know how much to use out of this little package? I can eyeball about 1/5 of the contents, but I'm nervous about guesstimating when it comes to fermentation. Is the quantity I use an exact science?

Eyeballing is just fine, and you can keep the leftovers in the freezer for next time.
