I have read that this acid is used to prevent bottle fermentation, but I have not seen it for sale at any of the hobby shops I frequent. Does anyone out there use this acid to prevent bottle fermentation ?

Fumaric acid has been used to prevent malolactic fermentation in bottled wine. As far as I know, it will do nothing to prevent the fermentation of sugar in bottled wine. Lum Del Mar, California, USA
