hazy chardonnay

I had my 2004 chard. "crystal clear" after ageing, fining and filtering." but there was still a LOT of carbonation. So I spun it with the drill attachment, and it took out a lot of gas. A few days later, it's real hazy, no sediment though. I waited a month and it continues to be hazy and the bubbles have returned. It sounds like it's refermenting, but It's been clear and stable for 1 1/2 years in the carboy. I've been making wine for 10 yrs and have not had this happen before. Any suggestions?

Did you resulfite fter degassing it?

Maybe it got innoculated with MLF bacteria.

And yeast are very unpredictable. Sometimes seemingly innoculous chages can spark them into action again.

You have to make sure that it is completely dry or at least enough sulpher to inhibit yeast proliferation.

Perhaps if you have not undergone MLF, it may be happening. Probably the more likely scenario.

If it had thrown a haze without sound, i would say it was heat unstable.
