How long on Sediment?

I added Bentonite to my wine 11 days ago and as stated in "First steps in Wine Making" by CJJ Berry have not racked yet. The main rubbish dropped out after about 2 days and has been virtually clear since then.

My question is - does this crap at the bottom start to decay and taint the wine before two weeks or would it take a lot longer?

You should leave wait to rack for 10-14 days after bentonite application (CJJ says a fortnight). The reason is that you want to give the lees a change to settle as much as possible. Otherwise, when you attempt to rack, you will suck up the loose lees, put them back in suspension, and your wine will be cloudy again.

The "cr*p at the bottom" is a combination of the cr*p that was suspended in your wine (and causing it to be cloudy) and the bentonite clay itself. The former was already there for months --- or you wouldn't be using the bentonite to clear it. I doubt another few days is going to make a difference. The latter is clay. It's not going to decay and taint the wine in our lifetime.
