In January I started a one gallon batch of black cherry from reconstituted juice. In April the odor was awful (very pungent and stomach turning). I decided to just leave it alone and planned to dump it later.
A few weeks ago I was bottling another batch and while I was cleaning up I thought it might be a good time to dump the cherry and clean the gallon jug. To my surprise the smell was wonderful. I then racked the cherry and bottled this week. Even without any bottle aging it is very good, certainly my best success story to date. I owe this success to a post I read out here once that said, "don't dump anything ever, just set it aside and leave it alone for a while, who knows what might happen." My thanks to that poster.
