looking for a good mead recipe...

I would like to try some mead. anybody out there care to pass on a good tried and true recipe.

After posting, I was thinking there are lots of sites with recipes but few that actually state how they turned out. I know when I was searching for a recipe I had a hard time finding a good basic mead and ended up creating one... don't use 1 cup of real strong tea in a 1 gallon recipe.

Greg, I see that a couple of your recipes have been sweetened but I don't see any mention of sorbate. Your bottling in beer bottles, are these sparkling wines?

My melomels that have been sweetened all have sorbate and are still. I think if you scroll down and look at the entry where I added the sweetener, you will find the sorbate addition.

My first "Death by Mead" was not sorbated. It was still for a while in the carboy and had some sugar left. I thought I had reached an alcohol level that would stop the yeast. I bottled it in beer bottles and I'm glad I did. It did ferment a little bit more and ended up being a nice sparkler. I have two bottles left.

You ought to go into business designing labels. Great stuff...!

Jack, thanks for the very kind comments. You have just inspired me to get cracking on my 2003 and 2004 logs. They are turning out to be my best wines yet. I'll try to get them on-line in the next couple weeks. I do like making labels. It's half the fun. Someday I suppose I should enter some in a label competition.
