MLF Chromatogram

Good Evening-

First, Thanks for the tips for the cheaper chromatography kit. It's been worth it so far.

I have the following chromatogram- if I read it correctly the wine marked 'chard1' has no Malic Acid. The lower spot on the Malic Acid trace may be due to a buffer splash- I was under the impression racemates traveled at the same speed so I don't think it's due to that.

I've started Chard2 on MLF culture and the 1gallon jug appears to be progressing (by smell). The cab will be started tonight whereas I haven't decided whether or not to let the Zin undergo MLF. Opinions? I have quite a bit of smoke in the Zin. The pinot Grigio is also undergoing (or will be by the time this is posted).

The two spots on the Malic are a bit odd, maybe some tartaric contamination? I would have to look at my own to refresh my memory on how they run. However, with regards to reds I would put them all through malo-lactic, at least to make them more stable. Tim

It definately could be tartaric acid- I had to sub the needle since I didn't have any pipettes. It could also be the PH7 buffer that splashed out in about that spot. I knew I should have marked it ;)

I've put them all under MLF and am now waiting a week to test them again. We'll see how they're running...
