Nectarines

I recently lucked into 10 free cases of nectarines that fell off of a truck. Actually the truck wrecked and I got 10 cases of the free nectarines that they decided to give away free. I pitted the nectarines. I know that peaches and apricots have a poison in the pits, but do nectarines? If not, and this wine turns out nice, then I may want to make a lot more next year. If they've got to be pitted though then I'll have to really think hard about whether it's worth it or not. So, do nectarines have to be pitted for safety sake? Bill

Lucky you! Nectarines are a delicious fruit that make an attractive sweet table wine. I have a recipe for nectarine 'sauternes' home wine that uses 4

1/2lb (2kg) to the gallon. It advises, "Remove any stalks, wash the fruit and cut in halves to remove the stones, then chop into small pieces prior to fermentation", as you would with Peaches and Apricots. Leaving the stones in will make your wine horribly tainted.

Nectarines are just bald peaches, so do pit them.
