Noobie asks What Might go Well with Concord Grapes?

My neighbor has a fence line full of Concord Grapes, no plans for them expect a few for table grapes. Being a noobie and not really knowing any better I am compelled to make wine. Even if it takes for ever to age. Yes, I've read the archives and past posts about the 'foxyness' and 'fuel oil' traits of concord grapes. But fools must rush in....

So, with apples being so plentiful right now and abandon trees dropping fruit everywhere I was wondering how apple mixed in would fair or what else might go well with concord grapes.. To put it another way what other fruit, veggie, spice, etc might help concord grapes. Anyone have ideas or experience to share?

I supopose it's poor form to answer your own question. But I use the archives extensively and appreciate any pointers I can find. So, I would like mention something simply to end the thread.

As of this date, Jack Keller's site (of course) is the only source of info. on the net I could fine re; making Concord Grape wine. And Mr. Keller has won 3 awards for this wine, two 1st place and one 2nd place. Which might indicate that good wine /can/ be made from Concord Grapes.

Onward and upward.....

There is a fair amount of concord made into sweet wine here in PA; I never made it though. Most of it goes to WQelches for juice and jelly, bith of which are excellent.

Most use about 10 to 20% water to reduce the acidity and foxiness, and I don't think they shoot for alcohol much above 10% V/V. Apples could go well, I would try it if I were you. Anything to ameliorate the foxiness seems like a good idea to me. I do make a few sweet wines and always try to get the TA below 8g/l no matter what.

There aren't any rules Steve and that's the beauty of making wine at home. A few weeks ago I ameliorated a 23l White Zinfandel must with 6 lb of concord grapes. The color is fantastic - rich hotrod red. Hope it turns out as well as it looks in the secondary. Note: when playing it's important to make adjustments for acids, sugars, pectin, etc. Understand the properties of the ingredients you are cooking with or there will be many poor outcomes.

Steve, Great links, thanks. The amount of water added suprised me, but I would follow those directions. It is a strongly flavored wine. Joe
