Would white oak whiskey barrel chunks work as well as oak chips?

not unless you like charcoal in your wine.
I know a few people that make wine in used Bourbon barrels. How do they do it, filter the wine?

Unless they like the taste of barbecued wine, they shave the inside of the barrel before putting wine into it.
