I just finished racking my wine to my secondary but I think I may have left it to late. The SG is .998. I am also about 1 litre down in my secondary. Should I top it up? It is a red kit wine (7L of concentrate or 1.83 gal.) and it sat in the primary for 10 days at about 23 degrees C (74 degrees F). Any help would be much appreciated.
