Racking pineapple juice wine

We are just making wine out of pineapple juice and we are racking tomorrow from the bucket to a carboy. When shall we rack the next time? And is it necessary to add campden tablets every racking? Or is there something else we should add, or nothing at all?

I take it that you and susanne are together?

Your second racking will depend on when the gross lees are for the most part done falling. Generally I ferment in primary for a week or two, secondary for a month and then every 3-6 months after that. You will add campden when you need to bring your SO2 levels up. Buy some titrets and use them. I generally need to add sulfite after primary and after the second racking then once more before bottling.
