Bart, you can. It will affect your clearing, though, as it will dump a lot of very fine pulp into the wine. However, you can just fine with Bentonite and be done with it.

Thad is correct. If it is dry sweeten it up. Sugar is necessary to bring out most fruit flavors.

You could be right -- the SG is below the range on my hydrometer (I'd estimate it at 0.982). I'll try sweetening this weekend. Thanks,
