Is there a formula or guideline to estimate how much free so2 is lost by aging or by aerating?

You need to measure it to really know what you've got. You also need to measure the pH to know if what you've got is the right amount.

Typically, in the winery, assuming we keep the barrels topped, we can expect a 10-12 ppm SO2 binding rate per month.
