Storing Elderflowers

Hello,

Elder flowers are due to be ready for harvest in my neck of the woods in about a months time. I'm about to move from 1G batches to my first 5G batch. Problem is, I'm also going to be moving before August and don't want to have to carry a large, wine filled, glass carboy up and down stairs to my flat.

So, I'm wondering what the best way to store elderflower is for a couple of months is.

Drying or freezing are my two options.

If freezing, would it be best to lay them out on a tray, then transfer to a box/bag.? Or putting them to soak in water and freezing that?

Thanks,

Matt
