I'm afraid that a couple of varieties of grapes in my home vineyard will ripen soon and because I will be away for a week do not have time to start the primary fermentation until after I return. Is it possible to freeze the ripe grapes and make wine from them when I return. If it is possible to freeze how is the best way to prepare them for freezing.

Just cut the clusters from the vines and freeze them in Ziploc bags or plastic tubs.
Are you _sure_ they're ripe already? This is pretty early - even for the South.

Are they hybrids? I've heard they ripen unevenly... perhaps a more thorough check should be made?
