Sweet goop or what?

I brought in a bunch of grapes and pales based on orders we received this year but somehow I seem to have gotten stuck with 12 pails with the label Muscat juice. I guess I should have taken deposits on these orders to start with, you live and learn, next year another deal... Anyway my question is simply this, this came from Madera California. I never dealt with it. Now 2 weeks in our cooler I don't know how good it is. Will this juice be anything but sweet goop? I was thinking of D-47 to dry it out, but I don't know if it is worth dealing with.



We are closing out our storage unit tomorrow, so it is either pitching a yeast or pitching it in the dumpster.

How could you even _think_ of dumping muscat juice? Hit it with Epernay II (Cotes de Blanc), cold ferment it and hope it sticks off-dry. Then fine, bottle and store it refrigerated. Mmmmmm! Delicioso. :^)
