want to bottle on a specific date

Okay.. question for all of you. My brother is getting married thanksgiving weekend (thats Nov 29th here in the states). I thought it would be neat to give him a bottle of wine that had been bottled when he was married on like his 5th anniversary or such... I know that my time is close to running out for starting.... what would a good time table be for hitting that date? Is there any problems with bottling a couple weeks early or late to hit that date??

Some of the kits can be ready to bottle if you want in this amount of time. I don't think it would matter if you bottle a couple weeks early or late of the projected bottling date. Just make sure the wine is clear and stable or it will throw a sediment.

But if you really want to make a wine that will be delicious and drinkable in 5 years, why restrict yourself to such a short bulk aging time? Have you thought about STARTING a wine on the wedding date? That way, you would have plenty of time for it to age in bulk.

Another thought ... if the wedding wine is spoiled in 5 years, what does that say for the marriage? :)

I agree with Greg. Wines are dated when they are started, not when they are bottled. Also, why 5 years. Just make a case for them and they can have a bottle every year for the next 24 years or until the wine or the marriage goes bad. These days I am not sure which I would put my money on. At least it would be a wedding gift that would be unique.
