I'm thinking about making a couple of batches using the Welch's concentrate. I've looked at them in the store, but I haven't seen (or don't remember) seeing a recipe and detailed description of this process. If anyone can give me more information (especially regarding the concentrates), it would be appreciated.

I have batches of each(among 17 other 1 gallon batches made from various recipes on his site), and while the niagara hasn't impressed me yet(needs more time, ti's less than 2 months from the start), the concord is starting to turn into a great tasting wine. Friend of mine makes his with another 1/2 - 1 full can more concentrate than Jack's recipe calls for, but you can figure that out to taste.
