Winemaker Mag "Claret" Blueberry WIne Posted!!!!

Thank you so much to Kiev at Winemaker Magazine who dug these up for me and faxed them asap!

Not sure which is from which date, as it's not indicated on the faxes, but here they are:

"Claret Blueberry Wine"

A claret style wine is similar to a dry red French wine wihta fruitier taste and aroma. This recipe yields 1 gallon (3.8 litres) of wine. Starting sg will be 1.190 to 1.100.

Ingredients:

3 pounds (1.4kg) fresh blueberries (2quarts) 1.5 pounds (900g) sugar 3 quarts (1.5 litre) boiling water 1 tsp acid blend 1c red grape concentrate (Zinfandel works well) 1tsp pectic enzyme 1c orange juice 1 pkg red wine yeast 1 campden tablet

  1. sanitize

  1. place blueberries in a 2gallon primary. crush with masher
  2. add 3 qts boiling water, acid blend and red grape concentrate. cover with towel
  3. let mixture cool to approx 24 degrees celcius
  4. mix yeast and orange juice to proof. add to cooled must
  5. loosely cover primary and stir twice a day for seven days.
  6. Strain solids out after 7 days. Rack into 1gallon and top off wiht cold water
  7. Rack after 10 days. add cold water
  8. sit for 60 days, rack and top off with cold water
  9. let stand for 10more days, rack. add 1 campden tab. bottle. bottle age for 3-6 months before drinking
