Black Mead Melomel.



4 lbs Blackcurrants
1/2 pint Red grape concentrate
2 lbs Honey ( light mixed flower) Nutrients Bordeaux yeast
1/4 oz Malic acid Water to make up to a gallon.

---------------------------------------- Dissolve the honey in 4 pints of warm water and add the acid and nutrients. Add this mixture to the crushed blackcurrants together with 2 pints of cold water and



2 campden tablets. After 24 hours, add the yeast starter Ferment on the pulp for 3 days then strain off the latter and press it lightly. Transfer to the glass jar, add the grape concentrate, and make up the volume if necessary and ferment until the gravity drops to just below O. Rack at this stage, add 1 campden tablet.
