Black Walnuts in beer

Hi,

I am new to homebrewing so please don't laugh at the following question. ;-)

Can I use black walnuts to flavor a homebrew beer? If so, how much (quantity) would you use in a 5 gallon batch? When would you add them to the brew? Do they need to be chopped up and put in a brew bag? What type of beer would they be go in ? example a ale or a stout? Any experience or recipes would be appreciated.

Forgot to state in the original post that I would be using only black walnut "meats".

Taste issues aside :), I would think the oil from the walnuts wouyld pretty much kill any head in the beer.

Not sure that I would ever do it but the flavor would probably work best in a darker beer. I also think the oils would not allow a good head to form. But people do use all sorts of things in their beer so do what you like.

I use Black Walnut flavoring from the supermarket to flavor Karo Syrup. I would imagine you could use that and avoid any problems with oils and still have the flavor you want. You would have to experiment a bit to find the amount you are looking for as it could easily overpower any malt flavor in a beer.
