Some newbie questions

Made my first batch of beer. Everything worked well. Can't wait to taste it. Some questions:

  1. I used Star-San to sanitize everything. This looks like pretty toxic stuff, but you aren't supposed to rinse. What gives? Isn't this dangerous?

  1. Before I'm about to bottle the beer, I rinse with Star-San but it tends to leave bubbles in the bottle. I ran a bottle cleaner through the bottle to break up the bubbles but should I just let the bubbles pop with time and then bottle. Seems to leave a lot of Star-San in the bottle.

  2. After fermentation is done, you can wait another week or so if you want the beer clearer before bottling. Won't all the yeast die? How come you can wait so long and still have live yeast.

star san is a very safe solution, some of there original advertising was drinking the straight solution! it has essentially the same amount of phosphoric acid as coca-cola. you can read up on it at

the yeast will become dormant over time but will wake up and be ready when you add priming sugar . many brewers use extended time in secondarys, especially for lagers at cold temps with no problems. yeasts are very hardy buggers! might suggest you read john palmers" how to brew" which is available as a freebie online. welcome to the obsession !!
