just bought a coopers stout kit, what is the recommended amount of fermentables to add and what kind should i add to get a lighter bodied stout.

Add 1.5 pounds of corn sugar and 1.5 pounds of wheat malt extract, and you should be good to go. You may want to steep a few ounces of chocolate or black patent grain up to 170 degrees F before the boil to get a more authentic flavor, but it's all up to you. Good luck!
