How do you know, when tea is weak, if it means it needs to steep longer, or if you need to use more tea, or it's a combination of the two. (Assuming the tea isn't stale, etc.)
I know how to recognize when tea has brewed too long - to me even if weak, it will taste bitter, tannic. And I know that each tea will be different, and it takes trial and error. But is there some sort of formula?
One reason I'm asking is I noticed that Adagio suggests brewing times longer than anything else I've read. A friend steeps everything for no longer than 30 seconds - if it isn't strong enough, he adds more and more tea until 30 seconds does the trick. I'm confused!!
