bout time I had a better wine

Since I have been drinking way to much La Vielle Ferme cote du Ventoux lately, good stuff but at 5.99 USD not really a great wine, I opened a 2004 Jean Paul and Benoit DROIN Tete de Cuvee Chablis this evening, My only question is where did the chablis go? little bit of grapefruit and then Horror of horrors! oak not chiplevels but noticable. All in all a good wine but a very disappointing Chablis if I were Dale, b-

My experience indicates that some of the Chablis producers are changing the recipe. Even a few of the 1er Cru Chablis are making wines, more closely associated with the "colonies." Where is the mineral? Where is that grapefruit? Why are there oak chips in my Chablis? Maybe the term "chablis" [ note lower-case] is no longer a bad thing in the US. Kinda' like Rose, the US wine public is starting to loosen up, but want a more familiar wine, and the continental producers are starting to offer it.

My knowledge of Chablis is very limited, but I gather it wasn't Chablis-like. But did you like it? Do you think you would have liked it if you had tasted it blind? How is Chablis vinified, traditionally -- I mean before stainless steele -- if not in oak?

It was vinfied in old (neutral) oak barrels that didn't impart any flavor to the wine. Some Chablis vintners still use them IIRC, but Droin wouldn't seem to be one of them.

Not really, I am not fond of either butter or oak in my wine, especially my white wine. I find oak to impart good things to otherwise tannin and healthy reds. My tastes of course are not those of the world, but I really get riled when my little favorites get messed with.

That said i am not a 15% alcohol lover either. I prefer finesse to the finish.

I have found varying degrees of oak in Droin. My guess (in hindsight) is the "Tete de Cuvee" designation is probably a tipoff (as Reserve often is). Thanks for notes, won't try this one.

It will be for me as well, I had some Droin a few months back that was Grand cru and not atypical at all so go figure.
