Champagne Sangria?

It's 4am and I can't sleep so I'm wandering about the wine world and thinking about Sangria I had a wild idea. Some Sangria recipes allow for white wine instead of red. Some Sangria recipes call for the last minute addition of soda water for some bubbles.

So, one thought lead to another and now I'm wondering what might happen if I substituted a Champagne or Sparkling Wine for the wine (of course making it at the last minute before serving to get the bubble benefit).

Would I have to call it a Sunday brunch Sangria? ;)

I've got to stand up for the magnificent fish taco; there's nothing like sitting in a zocalo on a sunny day eating fish tacos and drinking Mexican beer! Now I will agree that vegetarian chili sans carne is a true aberration. That's as bad as sugar-free cookies.

Bubbly Sangria is great for brunch, Prosseco, a nice Spanish Cava, or a Californian Brut make great combos with a citrus Sangria.

My wife worked with a fellow from Viet Nam, and related to him some of our problems with neighborhood cats prowling under our bird feeders. His response was "Cat tacos, yum". Sounds disgusting to me, and maybe there is an appropriate wine ... but I don't want to know. :-)

Cat is OK, we had some just after the War (WW2). It had been sold to us as rabbit, apparently. If feet and head are removed, it is almost indistinguishable. The only difference is that the shoulder blade on a cat is rounded and on a rabbit it's angular. I don't think anyone could tell by the taste.
