Clearing the barrels with herbal smoke

I visited this winery today, and bought a numbered bottle of the limited pr oduction of Motnik Rebula. The first release of this classic method. They s ay it is the first ever done (since their forefathers stopped, I noted, hah a). It is their top wine, at 30.5euros.
