I recently was at a wine store where the wine salesperson was telling me about how great the Behrens & Hitchcock Le Chats Du Monde 2003 wine was - and that is could be a collector because the winery partners are splitting up.
My question to the group is - has anyone tasted this wine yet? If so, what were your impressions and what might you pair it with outside of steak?

Thanks for the news - I didn;t know they were breaking up the winery team - but I have had the Chats du Monde, and highly recommend it. it is pricey, yes, but a wonderful wine. An interesting Syrah blend, high alcohol, wonderful nose that keeps opening up long after the bottle is opened, and a rich, full flavor. Knowing that they;re busting up the winery team, i may have to go get a few bottles for the cellar. Thanks!

Thanks for your input on the wine! I am having dinner at a friends house who likes big, bold wines. I think I might bring this over to his place and have him decant upon arrival. You mentioned that this nose keeps developing - how long of a pre-decant do you recommend prior to consuming?
