How long to keep Champagne

Maximum or minimum?

Anyhow: The 1996 should be a long-distance runner, a modern-day clone of the 1928, the wines showing the rare combination of full ripeness *and* high acidity levels. It will easily keep 20 to 30 years - BUT (and that is absolutely primordial) BUT ONLY if you can assure correct storage temperature of 55°F or lower (50°F is ideal) year-round.

The sweetish Nectar should keep 5 to 10 years.

Hi Michael How would you translate "primordial" into German? My suggestion was "urzeitlich", Babelfish says "ursprünglich"...

Thanks. I don't have access to ideal storage temperatures. They are being stored at room temperature. How does this affect the champagne?

We had the M&C 1996 New Year´s Eve. Absolutely brilliant, great complexity, mouth-watering acidity, lovely fruit and bread ... only thing wrong was a) it made all the other wines seem ... plebeian b) apparently it would gain by cellaring

Drink it with your best fish and shellfish recipe, the one that takes two days just to get the fonde for the sauce right ...
