Thanks for clarification re Therapy. I occasionally glance there, but hadn't in a while. When I was in Zachys this weekend a salesman I know (from Bordeaux Wine Enthusiasts) said he saw comments about me on another board. He said they were mostly positive, but I've been curious ever since. I checked places like WCWN and eGullet, but didnt see anything. I am not, and have never been, Joe Dressner.

Ack!!! Yes, that's the term I was feebly trying to remember. Of course, it's not quite the same, since as I understand it, spatchcocking involves removing the spine and breaking the breastbone when you flatten it.

Sounds right (I know she removed spine, and the bird was so flat under the brick pan that breast must have been broken). I just handle the grilling. :)
