Verjuice Question

Although verjuice (or verjus in French) is not a wine, I suppose one might consider it wine long before its time.

I recently purchased a half bottle of Maggie Beer Verjuice 2003 from South Australia. The instructions say to refrigerate after opening. I am wondering how long it might keep in the refrigerator before developing an off taste or smell. Since I will only use small amounts in cooking when I do not want to use vinegar, it could be several months before I finish the bottle. If need be, I could freeze part of it in small containers. I wonder if anyone has kept this product in the refrigerator after opening for long enough to know how it keeps.

During my wife's pregnancy, she purchased and drank some juice from Navarro vineyards. We get the opened bottles in the fridge under a VacuVin and they kept for a few weeks with no sign of fermentation (which I would think is what to watch out for). If you used argon and froze it, you should be able to keep it for a few months without a problem IMO.

. I am going to contact them with my question. On Google, I found many verjuice references. One site said to use it within about two weeks after openng and storage in the refrigerator. Another site with untreated verjuice froze it. They said to use within two weeks after thawing and storage in the refrigerator. Thus Ilikely will store mine frozen in small containers after I open it. Beer's product appears to be prepared much as is wine and contains a bit of SO2 just as wine does. Thus it is possible that it might keep a bit longer than an untreated product.
