Should I add both to my finished wine or only one? Would it be alright to add sugar to my finished wine to give it a sweeter taste? thanks

If you plan to add sugar back to the wine, you have to both sulfite _and_ sorbate it, unless you sterile filter. Then you need sulfite only.
To summarize: (1) Dry wine - bottle with sulfite (2) Sweet wine (unfiltered or loosely filtered) - bottle with sulfite _and_ sorbate. (3) Sweet wine (sterile filtered*) - bottle with sulfite.
- 0.45µ _absolute_ membrane (usually preceded by pad filtration).
If you're new at this, only #s (1) and (2) apply.
