Alright. I have my 25 pounds of strawberries now and am about to start my batch. I am following the recipe from the wine makers recipe book. Do I need to change any of the times in the recipe because I am making a 5 gallon batch vs. a 1 gallon batch?

Multiply all the quantities by 5, except the yeast, as one packet is good for 1-5 gallons.
Charles is right as far as quantities but in terms of time, no, you do not change anything. It takes just as much time to make 1 gal as 20.
