Peaches

Peaches will soon be in season. I am thinking of making a peach wine. I need some info as to: do I peel the peaches how many pounds for 6 gallon cut them up and use in primary? and what other ingredients I need. I am looking for a recipe from someone has done it vs a book or url... etc Thanks in advance Tom

I made a great peach wine this year.

I bumped up the pounds a bit so there was just a tad more peach flavor. Just before bottle I added some fructose to sweeten it a bit. Come on down and I'll pour you a bottle. It is great!

Dave, You mention adding fructose rather than sucrose will make a "fruitier" flavor. Why is that? Aren't both sugars just sweet? I understand that fructose is sweeter than sucrose

but if we're adding it to taste as you describe in the recipe, what's the difference between the two? BTW, I planning to use your recipe as soon as I gather enough peaches. Warren Place
