Christmas Greetings

People seem to avoid saying it of gps like this. Even so I will wish all a most Merry Christmas and temper it with my simple Christmas dinner menu.

There will only be 4 sitting at my table this year since sons and their families are doing their own thing and my 97 year old father has gone off to Cornwall to stay with his favourite Granddaughter and see his two great great grandchildren!

On arrival a traditional mulled wine

Starters Pigeon Pâté with toasted "soldiers" and salad.( I am serving a specially sweetened strawberry wine with this which is an excellent foil against the richness of the pâté.) ( I made the pâté yesterday with the breasts of 6 wood pigeons and several chicken livers and ......)

Fish Course Simply Fresh Oysters served on crushed ice with one langoustine. Served with a glass ( or 2) of Muscadet I am collecting the oysters today and they will live in a bucket of brine till the fatal hour!

Main Course with wine -- Barolo (I have found a couple of bottles of my favourite wine at a reasonable price!) Wild Duck or Pheasant. I shall roast quite simply with and apple and a garlic clove in the body cavity -- 2 pheasants and 2 ducks so we all have an equal choice. Served with all the traditional vegetables roast potatoes, roast parsnips and so on

Dessert Christmas pudding with brandy sauce and or Christmas Baked Alaska. I am trying mini individual baked alaskas this year so that I can make them quickly "on demand" as it were.

And I have a whole blue stilton which was a Christmas present from my younger son. It has been fed with port for 10 days and will be a fitting end to dinner. A choice of an LBV Port or my 1996 fortified Elderberry

And couple of bottles of Vintage Cava to clear the palate

To be able to survive this I shall do a 20 mile cycle ride first thing on Christmas Morning before starting up the oven!

Anyway I hope you all have a good Christmas day. It is good to enjoy one day away from the realities of this world we live in!

Happy Holidays! Safe travels, and happy times! I enjoyed reading your menu. My older 2 daughters are home from college. Besides my husband & I, and my younger daughter- this we will be joined for the day by one of my daughter's college friends whose family has left for Florida. Since our day is split up with visiting family, Christmas dinner will not be as extensive as your lovely meal. We're in the middle of a cold spell; it is -7 this morning and that doesn't take into consideration the wind chill (no bike ride for me). We're having a glazed ham, mashed potatoes, stuffing, fruit plate, veggie plate, etc. Dessert will be a cheese cake &/or a cherry pie. I'm still debating on what wine to serve with dinner, I'd like to try my pumpkin wine, which has been aging in the basement for almost 2 years, or a store bought zinfandel. Decisions, decisions.... And what time did you say you wanted us to get there? ;))

Well, I've just finished making giblet stock, and stuffing; wrapped the presents, and filtered this year's raspberry, blackberry and sloe gins. Phew. Think it's time for a little glass!

AOL; Merry Christmas everyone.

cheers, robin

Tom, Might I add "Id Mubarak" which is the traditional Muslim greeting at Id al Fitr and Id al Addah. In these days of increasing division between the Christian and Muslim worlds I have to say that I spent many happy years in the Sultanate of Oman. I also remember very vividly sitting in the Intercontinental Hotel in Rawalphindi talking with a total cross section of every sort of religion and it was only the Christians, Jews and Muslims who had a common base to their faith! It was, and is, typical of all the major conflicts which have divided us internationally for hundreds of years. Sadly it goes on and on! I make this comment as a retired British Army Officer who is still loyal the Queen and the government. That being so, it is still not easy to see the endless divisions that divide our small world. I will shut up!

An after thought. Actually cooking really is simple! Cooking is one of those things which is so easy! Either from recipes or, as I do, by "feel". Chefs can just do it much more quickly -- BUT not necessarily better than I!

Great menu!

Buon Natale

Peace on earth and happiness to all.

Just keep in mind that when the space invaders come they will not understand differences in race, religion, or ethnic heritage. We will just be earthlings to them and they'll treat us all the same

- something we should have been doing for centuries.
