Fruit Concentrate Question

Aug 19, 2004 2 Replies

Hi, We made a 3 Gallon batch of Cherry wine using the Vintner's Harvest 96 oz. can of fruit, following the recipe on the can. The wine turned out thin, with not much (IMO) cherry flavor. We still have two cans (Blueberry and Blackberry) and would like suggestions on how to make better wine out of these two cans. Looking at Jack's web page, the Cherry recipes are calling for 4 to 8 lbs. of cherries per gallon (the can is 6 lbs). The two things my wife & I have come up with are 1 - make 1 gallon out of a can and/or 2 - add raisins or grape juice for more body. Any opinions would be appreciated.

Thanks, Steve Baylus

Could you reduce the water by 5-10%?

Sounds like a plan!

But realize that fruit wine probably will not taste like the original fruit. Does grape wine taste like grapes? Not really. It will have some of the character of the original fruit but cherry wine will not really taste like cherries. It is the nature of the beast.
