ML Question

After you rack the wine of the gross lees then add ML culture how long can you leave it under an air lock in a 23 liter carboid with out any SO2? I am concerned about the length of time it will take to complete ML.

Depends who you talk to. As long as MLF is going the wine shoild be fine. The French supposedly don't add SO2 until the spring BUT I usually add it as soon as MLF is done.
