I was thinking of making a Peach-Strawberry wine. I have done both individually and was pleased with each. A few questions, though:
The peach I made was from a 'kit' that was just 3/4 gallon of peaches in water - no preservatives. I suplimented this with 1 additional 3/4 gallon of peaches from the store ( in light syrup and bright yellow).
If I just use ones from the store, should I drain the light syrup or use it as part of the liquid that I will add anyway?
I combined the recipes for strawberry and peaches that I found on Jack Kellars site. What do you guys think? (makes 5 US gallons).
6 lbs fresh strawberries
10 lbs canned peaches (include liquid)
10 lbs granulated sugar (or get SG to about 1.20)
2.5 lb golden raisins
2 tsp. citric acid
1.5 tsp. pectic enzyme
1.5 tsp. grape tannin Water to 5 gallons yeast (probably champagne) nutrient
Rack after 30 and 90 days. Check acid level after 30 days and ajust as necessary. bottle when clear.
