4 lbs dates 3 lbs sugar 2 teaspoons citric acid 1/2 teaspoon tannin 1 tablespoon depectiniser 1 nutrient tablet yeast water to makeup to 1 gallon. Method :- Pulp with depectiniser.

----------------------------------------------------------------- Pulp method:- Is to put the dried fruit , sugar, acid and tannin BUT not the yeast and nutrient into a polythene bucket (or container, for larger quantities) and pour 5 pints or so of boiling water over them. Only 5 pints of water are used because the sugar will fill the remaining portion of the one gallon jar later on. The must is stirred well to dissolve the sugar.

IF depectiniser is need as part of the recipe this should Not be added until the must is cool, and preferably 24 hours before the yeast, and nutrient so one prepares the must, cools it, adds depectiniser, waits 24 hours, adds yeast and nutrient and then continues as usual.

The yeast and nutrient are added when it has cooled to 65c - 75c. and then one ferments on the pulp for one week in the closely covered bucket, stirring daily. Then the liquor is strained into a glass fermentation jar, which is topped up to the bottom of the neck in cold water, and a fermentation lock is fitted. Thereafter proceed as usual.
