If your peaches aren't too acidic, why not go for pure peach juice - no added water, full flavour?

You can determine if it will be a problem. Check the acidity. IF it is too high, you have a problem. That is really the only way to know. If your are going to make up your own recipes, you need to check acidity, TA and pH, as well as sugar.
