Stirring...

I've read some recipes that say you should stir the must when it is in the primary, others don't mention it. Right now I'm doing a Vinters' Reserve Shiraz kit. The instructions don't mention anything about stirring, so should I just leave it alone?

Yes. There is not fruit cap tp break up and so just let it ferment on its own with as little interference as possible.
