Ok...I will soon be racking my wine into the carboy...I fill the airlock halfway with water and then put it in the carboy one its filled...question...the little cap that comes on the top of the airlock...do I put it back on after filling it with water or leave it off?

thanks..

Doesn't matter. You'll just have to top the airlock up more often if you leave it off and bulk age for a long time.

I usually add 1/4 of a campden tablet to the water too.

I found that the use of the little lid minimized the number of fruit-flies that got stuck in my air-lock. That's the only other difference I've seen, and it obviously could be done some other way (small piece of cheesecloth, etc.)
